Pressure Canning & Freezing Meats. Progress: Caught Pork Boston Butt on sale. Cut it up & ground it up using an old hand crank meat grinder. Recipe: 2 pounds ground pork, 2 teaspoons sage, 2 teaspoons salt, 1 teaspoon black pepper, 1/4 teaspoon marjorum, 1 Tablespoon brown sugar, 1/8 teaspoon red pepper & 1 pinch of ground cloves. Mix very well and pat into 24 patties. I used a canning jar lid, laid a piece of plastic wrap over it, put ball of sausage on the plastic, took the other end of the plastic wrap and pressed down making a patty. lift the plastic wrap and patty pulled right off. Froze in a single layer, then vacuum sealed 6 per package. This skill will never be complete in my book. However, I have learned to make sausage from scratch that my family really likes and that is a completed success :)
